Our premium Organic Cinnamon Quills are the "True Cinnamon" (*Cinnamomum zeylanicum*). Harvested from the delicate inner bark of the tree and hand-rolled into multi-layered quills, this is the authentic Ceylon variety. It boasts a sweet, complex, and floral flavour, and contains virtually no coumarin, unlike common Cassia cinnamon.
