Honest to Goodness Organic Penne is an artisanal Italian pasta, made with the ancient grain Senatore Cappelli - an ancestor of the modern durum wheat. This ancient grain is sought after for it's unique, buttery flavour and higher protein content.

 The pasta dough is bronze extruded (pressed through a bronze mould) and slowly dried over 30+ hours. This process creates a rougher texture that 'holds' sauce for the perfect al-dente bite. The grain Senatore Cappelli is an ancient grain with a delicious subtle-sweet and malty flavour. Its flavour is authentic and exquisite as the grain retains the original flavour profile as it has not been manipulated by modern agriculture for increased yields.
